Hello my name is William. I have a few questions on wheel fitment on my 2015 SHO. I found some decent mustang wheels they're 20 8.5 but the offset is +30. I'm confused on offsets will this stick out really far or in too deep?

That's the set I was looking at but I don't know if itll work cuz I see ppl saying minimum offset is 34 on SHOs and these +30
 
Welcome, WTP, glad to have you and your '15 SHO here with us on the forum!  x2 on the pixery! 

0.5" increase in wheel width means 12.5 mm you need to account for approximately.  Keeping stock offset (+38 IIRC) means the wheel would be pushed out 6mm towards the edge of the fender/wheelwell.  In other words, with the wider wheel you need to have a higher positive offset (+44 in this case) to maintain the stock stance.  Measure how much gap you currently have between tire & fender edge to see how much room there is for a lower positive offset (to make wheel/tire flush with fender, for instance).  HTH.

You can run wider tires with the 8.5 wheel to fill gap rather than change offset so much.  275/40/20 would be a great possibility.

Way too short...why are u decreasing diameter that much?...going to need a tune update to correct the speed..u will be racking up the miles if left unchanged and gonna have monster wheel gaps ...you are about 1.75" smaller diameter which is a huge change
 
I bought a set of Wheel Replica FR500 20 X 8.5 wheels and had the factory tires mounted.  The mustang hub size is larger so you may need hub rings to ensure they are centered.  They filled out the wheel wells nicely in my opinion.  I can post some pics later if you are interested.
