Ok I have a 2017 Mustang Ecoboost with only one mod, a Steeda cai when I am into it hard full throttle I get this bad convertor smell in the car. I noticed with the car on the rack the convertor is very discolored! Is this leaning out or are there other issues going on?

How many miles on your ride?  I would blame bad fuel first.  Have you tried the stock intake?  I know Steeda makes Fusion CAIs that may or may not require a tune based on setup.  Same for yours?

And welcome to EBPF!

If you can provide pics of the discoloration, might be easier to figure out.  Might be some SSMs or TSBs on this, will check.

I have about 4700 miles on it. Steeda CAI does not require a tune. Cat is very blue/purple color. I run Shell 91 octane

If the CAI requires no tune, its a paper weight, and should be removed. ALL 05+ mustangs have some form of controls strategy based on the CAI, if you can swap with no tune then the new CAI is not doing what it needs to. I would first go back to the original OEM piece and see if the issue persists. If it does, then chase the issue via warranty, the car has under 5k miles. If the issue goes away, get a CAI that actually requires a tune, or leave it stock. The OE intakes on newer mustangs are very good.

Cats get hot.. i would expect some blueing of the connectors and edges.  The smell it determined by the following.

When you smell something bad,  is it bad-egg awful smog smell OR is it acrid acidic somebody is welding something smell.

Former is gas,  and the fact your cats are brand new and in 50k miles they will be fine.
later would concern me more..
